BBQ Chicken Salad (from Life As A Lofthouse)

Since I discovered Pinterest, I have been adding all kinds of recipes to my arsenal. This was the first one I made and is now one of Brad and I's favorite things to eat. This is from the blog Life As A Lofthouse, which I have really grown to love. Click on link below to read her whole post - I cut and pasted her recipe as I followed it almost to a T.

3 cups cooked, cubed Chicken
2 cups Barbeque Sauce (recipe below)
3 Romaine Lettuce Hearts, cleaned and chopped
1 can Black Beans, drained and rinsed
1 small bag Frozen Corn, cooked
1 cup Colby Jack Cheese, shredded
2 Green Onions, chopped
1/2 cup Cilantro, chopped
Ranch Dressing
Tortilla Strips

Combine chicken and barbeque sauce. Stir to coat chicken with sauce. Set aside. 

In a large bowl add the romaine lettuce, black beans, corn, cheese, green onion and cilantro. Toss together. Divide the salad evenly among plates. Top each salad serving with desired amount of barbeque chicken. Serve with tortilla strips and dressing.

Zucchini Bread (with yogurt)


Today I tried a new zucchini bread recipe with yogurt & walnuts. It was delicious! I made it with zucchini from our garden.

Ingredients

  • 1 cup walnut halves (4 ounces)
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup plus 2 tablespoons sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup fat-free plain Greek yogurt
  • 1 cup coarsely grated zucchini, from about 1 medium zucchini

Preparation

Preheat the oven to 325°. Butter and flour a 9-by-4 1/2-inch metal loaf pan. Spread the walnut halves in a pie plate and toast them for about 8 minutes, until they are fragrant. Transfer the toasted walnuts to a cutting board and coarsely chop them, then freeze for 5 minutes to cool.

In a large bowl, whisk the flour with the baking powder, baking soda and salt. In a medium bowl, mix the sugar with the eggs, vegetable oil and fat-free yogurt. Add the wet ingredients to the dry ingredients along with the grated zucchini and toasted walnuts and stir until the batter is evenly moistened. Scrape the batter into the prepared pan and bake for about 1 hour and 10 minutes, until the loaf is risen and a toothpick inserted in the center comes out clean. Let the loaf cool on a rack for 30 minutes before unmolding and serving.

Delicious Apple Crisp (Food Network)

I made this round from apples from Timeless Prairie Orchard that I bought at the Cedar Falls farmer's market today. I got the recipe from Food Network.

YUM!!



**I modified this receipe because I didn't realize that we were out of oatmeal, so I used 4 packets of Trader Joe's instant maple & brown sugar oatmeal.

**I also only added 2T of the sugar and only 1/2c of brown sugar since I used the packets.

It was just the right amount of sweet!

Ingredients
  • 8 cups firm tart apples, sliced
  • 4 tablespoons sugar
  • 2 tablespoons lemon juice
  • 2/3 cup sifted all-purpose flour
  • 2 cups uncooked oats
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 2/3 cup butter, melted
Directions
Preheat oven to 375 degrees F.
In a 9 by 12-inch glass baking dish, combine apples, sugar, and lemon juice. Set aside.

In another bowl, combine flour, oats, brown sugar, salt and cinnamon.

Toss with melted butter until mixture resembles coarse crumbles.

Top apples with oat mixture.

Bake for 30 to 35 minutes, or until apples are tender.

Dre's Sloppy Joe's

1 pound of ground beef (or turkey or chicken)
1 bottle of Heinz chili sauce
1 onion

Brown beef and onion. When nearly done, add bottle of chili sauce (or as much or little as you like).

Super easy when I have no brains to cook or be creative. YUM.

Mom Y's Beef and Noodles

Put a roast in the crock pot and let cook until falls apart. (Can take up to 5 hours, depending on the crock pot)

When done, take out and pull apart into bite sized pieces. Put roast in pan, add can of beef broth and a can of water. (You can use two cans of beef broth, depends on the size of the roast or how much liquid you prefer). I use Reames frozen noodles. Put noodles in pan and cook until done

Dre's Goulash

1lb ground beef
onion
1 10oz can Rotel
1 14.5oz or smaller can of diced tomatoes
shredded cheese

Can be cooked 2 different ways;
#1 Cook the ground beef and onion first, then stir in the tomatoes and cheese until cheese in melted

Cook the ground beef and onion first, then stir in the tomatoes and cheese until cheese in melted. Then put in a 9x11 pan and bake for 15-20 minutes in the oven, until cheese is browned on top.

Meatloaf

1 beaten egg
3/4 cup oatmeal
1/4 cup milk
1/4 chopped onion
1/4 cup chopped green pepper
1/2t dried basil or oregano
1/2t salt
1/2t pepper
1lb. ground beef
2T bottled BBQ sauce or catsup

Mix egg, oatmeal, milk, onion, salt, pepper, basil. Add ground beef

350 degree for 45-50 minutes
Spoon BBQ/catsup over top
